NOTES: Chefs Creek flows into Deep Bay in the Baynes Sound region of Vancouver Island, BC. Raised by Stellar Bay Shellfish in floating-trays, and finished on the beach, Chefs Creek have a classic look. Harvested at the ideal size for eating on the half shell, around 3 inches, they have narrow, shallow cups with ivory meat and a dark black mantle. They are creamy with a nice medium briny, yet sweet flavor.
