FLAVOUR PROFILE: Fresh taste, moderately briny flavour that ends with a hint of cucumber.
NOTES: The Hollie Wood Oyster is a larger version of the Satori. We start growing these oysters in deep water and tumble them in a machine to shape them and give them a deep cup. They are then transferred to the beach to strengthen them for a longer shelf life and harden their shell, and harvested when they reach 3 inches in size. This is where they get their distinct flavour. All Hollie Wood Oysters are sustainable and Ocean Wise approved.
Family operated shellfish farmers Greg and Hollie Wood have been farming shellfish since 1996. Their farm is located in the pristine waters off Denman Island, part of the oyster capital of Canada, the Baynes Sound region of Vancouver Island.
