FLAVOUR PROFILE: Fresh taste of the Pacific Ocean, with a delicate cucumber aftertaste to finish.
NOTES: Named after Okeover Inlet on B.C.’s Sunshine coast, at the southern end of Desolation Sound, 100 miles north of Vancouver. Okeover oysters have a very scalloped shell with blue-purple highlights. They are tray-grown for their shape and then beach hardened to make them easy to shuck. Firm texture and a deep cup make for a delicious morsel from the sea.
