NOTES: Stellar Bay oysters are a larger version of the Kusshi oyster. This small, deeply cupped Pacific oyster is grown in a very unique process in the rich waters of Deep Bay off of Vancouver Island in British Columbia, Canada. Farmed using the tray suspension method coupled with a unique tumbling process. Suspended in mesh trays in deep water their entire lives, they are protected from predators, mud, sand and silt.
Their unique, deep cup comes from the regular tumbling they are given during their cultivation. The extensive tumbling, strengthens and slows down shell growth, but doesn’t impede the oyster from growing inside of the shell. The resulting Stellar Bay Gold oysters are exceptionally plump and full, practically spilling out of their shell — a mild and meaty little oyster, that appeals to the beginner oyster eaters and pros alike.
